It was decided that the winery should have a Cape aesthetic classic base, yet incorporate a freshness that would set new standards but also match the longevity of the property’s historic heritage. Situated high up on a hill, the octagonal structure, the shape of which mirrors the octagonal walled garden laid out by Willem Adriaan van der Stel in 1700, offers sweeping views of the property and the surrounding areas, as well as False Bay with Table Mountain as a backdrop. This gravity flow cellar reflects a return towards simplicity and craftsmanship in winemaking whilst retaining the property’s natural splendour
