Vergelegen's winemaking philosophy is simple : there must be harmony between the old and the new.  

SEMILLON NOBLE LATE HARVEST 1998

The wine has a very attractive golden colour with hints of green.  The nose is reminiscent of dried fruit, especially apricots and peaches with wafts of honey.  The wine is full and sweet with a nervous balance between fruit sugar and acidity.  The aftertaste is long and lasting.

Origin

 

The vineyards are relatively young at 8 years old.  Unique climatic conditions lead to Botrytis cinerea (Noble Rot).  The grapes were harvested into 20kg lug boxes, towards the end of April.

Vinification

 

The grapes were not crushed or destemmed as it is very difficult to pump the relatively dry berries.  Fermentation was initiated on the skins in the press.  After 48 hours of fermentation on the skins, the bunches were slowly pressed over a period of 6 hours.  Fermentation took 8 weeks to complete.

100 % Botrytised Semillon grapes from our own vineyards.

Maturation

 

The wine should be matured for another two years before opening.  Unfortunately the majority will be consumed while still young.
