Vergelegen's winemaking philosophy is simple : there must be harmony between the old and the new.

VIN DE FLORENCE 1996

Wonderful summer poolside or bridgetable drinking on its own.  Apart from that arguably the best beverage with spicy foods like curries and Thai-style chicken.  Serve well chilled.

Origin

All the grapes for this wine are bought in, mostly from the Somerset West area.  Only the Rhine Riesling is from Stellenbosch.  The vineyards are between 10 and 30 years old and bear an average of approximately 7 tons/ha.

Vinification

The techniques are geared to retaining and expressing fruitiness, thus for most of the varieties reductive methods are used.  Only the Rhine Riesling is handled somewhat oxidatively.  No skin contact is given.  Fermentation temperatures range between 121/4C and 151/4C.  Cooling is used to arrest fermentation at around 9 g/l residual sugar.  The individual batches are stored cold until blending and bottling.
