WINES  print this page

Vergelegen's winemaking philosophy is simple : there must be harmony between the old and the new.

CABERNET FRANC MERLOT 1999

This classic wine reveals an intense and opulent bouquet. The rich layered mulberries, cinnamon and spice envelope the taste buds. The reward is in the keeping as it matures to enhance its pedigree.

Origin

All the grapes were sourced from Vergelegen from our Rondekop and Kopland vineyards. These vineyards are all north or northwest facing with Hutton and Clovelly soils. The vineyards yielded between 5 - 5.5 tons per hectare.

Vinification

After a standard crushing and destemming the wine was fermented in a combination of open and closed tanks. The fermenting juice was pumped over the skins every 3 - 4 hours. Fermentation lasted for 5 days at a temperature of 28?-30?C. Malolactic fermentation took place in barrel and the wine was matured in 100% new French Oak for a period of 17 months.
