ORIGIN

The fruit came from Vergelegen's own vineyards as well as selected Pinot Noir vineyards in Elgin. The Chardonnay from Vergelegen comes from South facing vineyards on Korhaan at 230 meters above sea level. These vineyards are all dry land - not irrigated - and never yield more than 6 tons per hectare. The soils are granites or clay-based Clovelly.


VINIFICATION

The grapes were hand harvested towards the last week of January 2008 and then whole bunched pressed in a wooden basket press. The juice recovery amounted to 450l/ton and was lightly settled before being run off into used 225l barrels. The young base wine was inoculated for the malolactic fermentation and once completed the new base wine spent another 6 months in bottle before it was prepared for the second fermentation in bottle. The young sparkling wine was left on the lees for a further 3 years before degorgement on 9 December 2011. A total of 5000 bottles were produced.

Light straw colour, fresh apples and strawberries on nose, also strong yeastiness, refreshing acidity and minerality.
